APPLE-CARROT MUFFINS 
1/2 c. powdered milk
3 tsp. baking powder
1/2 tsp. salt
1/2 tsp. allspice
1/2 tsp. nutmeg
1/2 tsp. cinnamon
2 1/2 c. whole wheat flour
1 c. honey
1 c. safflower or other oil
4 eggs
1 tsp. vanilla
1 c. grated unpeeled apples
1 c. grated carrots, unpeeled

Combine milk solids, baking powder, salt, spices, flour. Combine honey, oil and eggs; stir into dry ingredients. Fold in apple and carrot. Spoon into greased and floured tins. Bake at 400 degrees for 15-20 minutes. Makes 2 dozen.
