OVEN CRISP SWEET POTATO CHIPS | |
1/4 c. butter 1/2 tsp. salt 1/4 tsp. pepper 1/8 tsp. paprika 1 lb. (about 3 med.) sweet potatoes 2 tbsp. grated Parmesan cheese, if desired Heat oven to 425 degrees F. Lightly butter 15x10 inch jelly roll pan. In small saucepan, melt butter; stir in salt, pepper and paprika. Peel sweet potatoes; slice into very thin slices. Arrange evenly in prepared pan. Brush butter mixture over potatoes. Bake at 425 degrees F. for 25 to 35 minutes or until crisp and golden, stirring twice during baking so that slices brown evenly. Sprinkle with cheese. Serve immediately 4 to 6 servings. |
