ROAST NEW POTATOES & GARLIC | |
1 lb. new potatoes (8 medium or 10 small) Bay leaf, fresh thyme or rosemary 1 head garlic 2 tbsp. olive oil Salt and pepper Preheat oven to 325 degrees. Wash potatoes and place in oven-proof dish. Add a few bay leaves and sprigs of fresh herbs. Separate the head of garlic into individual cloves, but do not peel. Sprinkle the cloves around the potatoes. Drizzle the potatoes and garlic with olive oil, season with salt and pepper and stir to blend. Bake for about 1 hour, stirring occasionally. When potatoes and garlic are both tender they're done. |
