SPINACH LASAGNE ROLLS 
1 lb. lasagne noodles, cooked, cooled
4 c. your favorite spaghetti sauce (homemade or jar)
2 lb. ricotta cheese
1 c. grated Parmesan cheese
1 (10 oz.) pkg. frozen chopped spinach, thawed and well drained
2 eggs
1/8 tsp. nutmeg
Salt and pepper to taste

Blend cheeses, spinach, eggs, and spices until smooth. Spread 1/4 to 1/3 cup mixture over lasagne strip, roll up. Spread 1 cup sauce in bottom of lasagne pan, place rolls in dish seam side down. Bake at 350 degrees for 20 minutes. Stripe rolls with 1 cup sauce, sprinkle with more Parmesan, cover with foil and bake 15 minutes more. Serve with remaining sauce.
