GROUND TURKEY AND SPINACH ROLL 
1 1/2 lbs. raw ground turkey
1/2 c. finely chopped onions
1 (8 oz.) can tomato sauce
1 c. all bran cereal
2 egg whites
1 tsp. dry mustard
1 tsp. oregano leaves
1 tsp. garlic powder
1 (10 oz.) pkg. frozen chopped spinach, thawed, well drained
1/2 c. shredded Mozzarella cheese
1 tsp. horseradish
Fresh parsley

In large mixing bowl combine turkey, onions, 1/4 cup of the tomato sauce, cereal, egg whites, mustard, oregano and garlic powder. On foil pat turkey mixture to a 12"x8" rectangle. Evenly spread spinach and cheese over meat. Starting on shortest side, roll up meat using foil to help roll. Place seam side down in shallow baking pan. Bake at 350 degrees for about 55 minutes or microwave on High 12 minutes, turning twice.

After baking, combine remaining sauce and horseradish. For conventionally baked ingredients, bring this mixture to a boil, reduce heat to low and simmer 10 minutes. For microwaved ingredients, spread this mixture over meat and microwave 1 minute longer; let stand 10 minutes before serving. Garnish with parsley.

Since microwave ovens vary in power, you may need to adjust your cooking time.
