CINNAMON CUCUMBER RINGS 
2 gal. cucumbers (large ones are best)
2 c. pickling lime
8 1/2 qt. water
3 c. vinegar
1 tbsp. alum
1 sm. bottle red coloring
2 c. water
10 c. sugar
8 cinnamon sticks, broken
6 oz. pkg. red heart candy

Peel, slice and remove center portion of cucumbers. Mix 2 cups of lime and 8 1/2 cups water. Pour over cucumbers and soak for 24 hours. Drain and rinse. Mix 1 cup vinegar, alum and red food coloring. Pour over cucumbers with enough water to cover. Simmer 2 hours. Drain and put in large container. Makes syrup. Combine 2 cups vinegar, 2 cups water, sugar, cinnamon sticks and red heart candy. Bring to a boil and pour over cucumbers. Allow to stand overnight. Place cucumbers in jars. Reheat syrup and pour over cucumbers in jars and seal at once.
