YAM PECAN TORTE | |
1 stick butter, softened 1 c. chopped nuts 1 (8 oz.) pkgs. cream cheese 3 c. mashed sweet potatoes 1 tsp. cinnamon 1 c. powdered sugar 1 c. flour 4 1/2 oz. Cool Whip (1/2 of bowl) 1 tsp. vanilla extract 1 c. sugar 1 tsp. lemon extract Combine butter, flour, and pecans. Press firmly in bottom of 9"x13" pan. Bake at 350 degrees for 20 to 30 minutes or until brown. Cool completely. Blend Cool Whip, cream cheese, powdered sugar and vanilla until smooth. Spread over crust. Combine yams, sugar, cinnamon, lemon extract and spread over cream cheese layer. TOPPING: 1/2 stick butter, softened 1 c. chopped pecans 1 c. Angel Flake coconut Mix together and spread over yam layer. Place baking dish under broiler, broil about 3 minutes or until top is slightly brown. Chill, cut into squares to serve. |
