YAM PECAN PIE | |
1 c. cooked sweet potatoes, mashed 1/3 c. brown sugar 3/4 tsp. cinnamon 1/2 tsp. salt 3/4 tsp. ginger 3/4 c. canned milk 2 eggs, beaten 1 (9-inch) unbaked pie shell Combine all ingredients and pour into pie shell. (If fresh sweet potatoes are used, add 1/2 cup sugar.) Bake at 375 degrees for 20 minutes. Combine 1/2 cup soft butter, 1/2 cup brown sugar, and 3/4 cup finely chopped pecans, sprinkle over filling and bake another 25 minutes. |
