PEARL'S PORK ADOBO | |
1 pkg. pork country style ribs 1 large onion, minced 3 cloves garlic, minced 1 tbsp. olive oil low-sodium salt, to taste (optional) ADOBO SAUCE: 1/2 cup low-sodium soy sauce 1/2 (12 oz.) can 7-Up soda (I use diet) 2 medium dried bay leaves 1 tsp. ground black pepper 1/2 tsp. dried oregano 1/2 tsp. smoked paprika 2 tbsp. apple cider vinegar 1/2 cup water In large skillet, on high heat, sauté onion and garlic in olive oil until transparent, add baby back ribs and stir for 2 minutes till opaque in color. Stir in all sauce ingredients. Bring to a boil, add low sodium salt to taste, if needed. Reduce heat to low, and cook for 1 hour or until all liquid is reduced to sauce like consistency, stirring once in a while, and the meat is very tender. Best serve with rice.
