SOFT GINGER COOKIES 
6 to 8 c. all-purpose flour
1 tsp. salt
1 1/2 tsp. cinnamon
3 tbsp. ginger
1/4 tsp. nutmeg
1 c. shortening
1 c. sugar
1 egg
2 c. molasses
2 tbsp. vinegar
4 tsp. baking soda
1 c. boiling water

Sift 6 cups flour with salt and spices. Cream shortening and sugar, add egg. Add molasses and vinegar. Then sifted ingredients. Lastly, add baking soda dissolved in boiling water. Add more flour if necessary to make soft dough.

Bake at 350°F 8-10 minutes.
