CHOCOLATE-AMARETTO CHEESE CAKE | |
6 chocolate wafers or graham crackers, finely crushed 1 1/2 c. light process cream cheese 1 c. sugar 1 c. low fat ricotta cheese 1/4 c. + 2 tbsp. unsweetened cocoa 1/4 c. all purpose flour 1/4 c. Amaretto 1 tsp. salt 1 egg 2 tbsp. semi sweet chocolate mini morsels Chocolate curls (garnish) Lightly rub sides and bottom of pan with butter. Sprinkle crushed wafers on bottom of 7" spring form pan. Set aside. In a food processor, add cream cheese and next 7 ingredients; process until smooth. Fold in chocolate morsels. Slowly pour mixture into pan over crumbs. Bake at 330 degrees for 65 to 70 minutes or until cheese cake is set. Let cool on wire rack. Cover and chill 8 hours. Remove from pan and transfer to serving platter. Garnish with chocolate curls. Serves 12. About 200 calories per serving. Be sure to make at least a day ahead. |
