ESCALLOP CHICKEN 
1 chicken, cooked and deboned
4 tbsp. flour
4 tbsp. butter
1 qt. hot chicken broth

Cook to make gravy. Combine:

1 1/2 qt. dry bread crumbs
2 beaten eggs
4 tbsp. chicken fat
2 tbsp. onion
3/4 tsp. salt
1/4 tsp. pepper

Mix lightly with fork. Place chicken in 9 x 13 inch pan. Add bread mixture. Melt 1/2 stick butter and pour over. Pour gravy over top. Bake at 350 degrees for 30 to 40 minutes.
