EGGPLANT CASSEROLE 
1 med. eggplant, cubed
3 med. onions, diced

Cook in salted water until tender. Drain off water.

Add:

1/4 lb. butter, cut into chunks
2 or 3 beaten eggs
1 c. milk
1 c. American cheese, diced
1/4 lb. cracker crumbs
1 tsp. baking powder

Mix lightly - pour into buttered casserole and bake. Servings: 6.
