BUTTERED CAULIFLOWER 
2 1/2 lb. head cauliflower (1 lb. cleaned & trimmed)
1/2 tsp. lemon juice
Boiling water to cover
1 tsp. salt
1/4 stick butter

Remove leaves from cauliflower, cut off stalks. Soak in salt water to drive out insects 1/2 hour. Break into flowerettes. Add cauliflower to boiling water. Add salt. Simmer 10-12 minutes until tender. Do not overcook. Drain.

Melt butter and pour over all. (If cauliflower trimmings - leaves and ribs are green and fresh, cut ribs in 1 inch pieces, cook until almost tender, add leaves, cook a bit longer and serve buttered or with a sauce delicious.) 4-5 servings.
