ZUCCHINI-TOMATO CASSEROLE 
4 strips bacon
1/2 c. onion
1/2 c. pepper (green) (optional)
4 c. sliced zucchini
1 c. shredded Cheddar cheese
1 c. salad croutons
1 c. diced tomatoes
1 c. chunky tomatoes and herbs spaghetti sauce

1. Fry bacon until brown and crispy - remove from pan and drain on paper towel.

2. Add onion and pepper (if desired) to bacon drippings in pan and saute until tender.

3. Combine all remaining ingredients in a casserole dish along with onion and crumbled bacon. Mix well.

4. Bake at 350 degrees 40-50 minutes until tender.
