QUICK BEEF STEW OVER BAKED
POTATOES
 
2 lb. beef, cut in 1 inch cubes
2 tbsp. shortening
1/2 c. chopped onion
1/2 c. minced green pepper
1 tsp. salt
2 cans (2 1/2 c.) condensed tomato soup
6 baked potatoes

Brown meat in shortening in a heavy saucepan; add onion, green pepper and salt. Pour in soup, cover and simmer about 45 minutes or until meat is tender. Serve over hot baked potatoes. Makes 6 servings.
