JEAN'S SUMMER SALSA 
8 fresh, peeled and chopped tomatoes
2 sweet (Vidalia, Maui, or Walla Walla) onions, chopped
4 oz. can Ortega chili peppers
1/4 c. chopped parsley
1 tbsp. wine vinegar
1 tbsp. olive oil
1 tbsp. salt

Serve as a dip with tortilla chips or as sauce with chicken or meat or...

Easy peeling: Drop each tomato into boiling water for 30 to 60 seconds. Plunge into ice water. Skin peels off with ease.
