CREAM OF BROCCOLI SOUP 
3 c. chicken broth
1/2 c. chopped onion
2 c. broccoli
1 tsp. dried thyme
1 sm. bay leaf
4 tbsp. butter
4 tbsp. flour
2 c. milk

In large saucepan combine chicken broth, onion and broccoli, and seasonings. Bring mixture to boiling. Reduce heat, cover and simmer 15 minutes. Remove bay leaf.

Place part of the vegetable mixture into a blender, cover and blend 30 to 60 seconds until smooth. Pour into a large bowl. Repeat with remaining mixture, set aside.

In same saucepan melt butter. Blend in flour, salt and pepper. Add milk all at once. Cook and stir until mixture is thickened and bubbly. Add blended vegetables and stir until soup is heated through. Season to taste.
