1 c. vegetable oil
2 eggs
2 c. sugar
2 1/2 c. flour
2 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
3 apples (large) peeled and chopped
1 (6 oz.) bag butterscotch chips

Thoroughly mix oil, eggs and sugar. Mix in flour, baking powder, salt, soda and cinnamon (mixture will be thick). Add apples, stir. Spread in 9 x 13 ungreased pan. Sprinkle on chips. Bake at 350 degrees for 45 to 60 minutes.
