POTATO CASSEROLE 
2 c. sour cream
1 can cream of chicken soup
2 c. Cheddar cheese, grated
1 tsp. salt
1/4 tsp. pepper
1/2 c. onion, chopped
1 small jar pimientos
2 lbs. frozen hash browns, slightly thawed (not patties)

Mix all ingredients together except has browns; fold hash browns into mixture.

Bake in 9 x 12-inch baking dish at 350°F for 45-60 minutes.
