BRUNCH CASSEROLE 
6 eggs
6 c. milk
1 1/2 lbs. bulk sausage
6 slices cubed bread
1 tsp. dry mustard
1 tsp. salt
1 1/4 c. shredded cheddar cheese
1/4 c. chopped onion (opt.)

Crumble and brown sausage, then drain and cool. Mix, using a mixer, eggs, milk, salt and mustard. Stir in onion, bread, cheese and sausage. Put in 9"x13" greased pan. Cover and refrigerate overnight. Take out 30 minutes before baking. Bake at 350 degrees for 55 to 60 minutes. Let stand 5 minutes before serving.
