ZUCCHINI BOATS 
4 med. zucchini (2 lbs.)
1/4 lb. bulk pork sausage
1/4 c. chopped onion
1/2 c. fine cracker crumbs
1 slightly beaten egg
1/2 c. grated Parmesan cheese
1/2 tsp. monosodium glutamate
1/4 tsp. salt
1/4 tsp. thyme
Dash EACH garlic, salt and pepper

Cook whole zucchini in boiling salted water until barely tender, 7 to 10 minutes. Cut in half lengthwise; scoop squash from shells and mash. Cook sausage and onion; drain off excess fat.

Stir in mashed zucchini. Reserve 2 tablespoons cheese; mix in remaining ingredients. Spoon into zucchini shells; place in shallow baking dish. Sprinkle with Parmesan cheese. Bake at 350 degrees for 25 to 30 minutes. Makes 4 servings.
