VEGETABLE SCRAMBLE | |
1 tbsp. vegetable oil 1 (6 to 8 inch) zucchini, sliced (1/4 inch) 1 c. green pepper, julienned 1 c. fresh potatoes, diced 1/2 c. onions, chopped coarsely 1 lg. fresh tomato, cut in wedges 1/4 tsp. garlic powder 1/2 tsp. salt 1 bay leaf Heat oil to frying temperature in heavy saucepan. Add vegetables and seasonings to hot oil. Stir fry 3 minutes. Reduce heat to low, cover and cook, stirring occasionally about 20 minutes. Remove bay leaf and serve hot. Yield: 5 to 6 servings. |
