COTTAGE POTATOES 
10 med. potatoes, cooked with skins, peel & dice
1/2 lb. Velveeta cheese, cut in cubes
1 sm. jar pimento
1 sm. onion, chopped
1 piece green pepper, diced
1 c. diced or cubed croutons
1 c. melted butter

Mix and bake in 350 degree oven for 40 minutes in 9 x 13 inch pan. Stir a few times so cheese gets melted through. This can be made 4 or 5 days ahead and put into tupperware and then baked when needed.
