UPSIDE-DOWN STRAWBERRY SHORTCAKE 
1 c. miniature marshmallows
1 pkg. (16 oz.) frozen sweetened sliced strawberries
1 pkg. (3 oz.) strawberry gelatin
1/2 c. shortening
1 1/2 c. sugar
3 eggs
1 tsp. vanilla extract
2 1/2 c. all-purpose flour
3 tsp. baking powder
1/2 tsp. salt
1 c. milk
Fresh strawberries
Whipped cream

Sprinkle marshmallows evenly into a greased 13 x 9 inch baking dish. Set aside.

In a bowl combine strawberries and gelatin powder. Set aside. in a mixing bowl cream shortening and sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, baking powder, and salt and add to creamed mixture alternately with milk. Pour batter over marshmallows. Spoon strawberry mixture evenly over batter.

Bake at 350 for 45 - 60 minutes. Cool. Cut in squares. Garnish with strawberries and whipped cream.
