SCOTCH EGGS 
1 lb. pork sausage
8 hard boiled eggs
2 beaten eggs
2/3 c. crushed Ritz crackers

Divide sausage into 8 parts. Shape each portion into a 4" patty. Wrap the patty around an egg, covering completely. Roll each egg in the beaten egg, then in crushed crackers. Bake in shallow dish at 375 degrees for 35 to 40 minutes or until sausage is well done. Try adding pepper or garlic flakes to crackers. These do just as well with ground turkey or combination of turkey and sausage.
