TOFU CHEESECAKE 
2 lbs. tofu
1/2 tsp. salt
1/4 c. lemon juice
1/2 c. mild flavored oil
1/2 c. + 2 tbsp. honey
2 tbsp. vanilla
1 tbsp. cornstarch
1 1/4 c. graham cracker crumbs (for crust)
1/4 c. butter, softened, or butter

Preheat oven to 350 degrees. Dissolve cornstarch in 2 tablespoons of water. Combine all filling ingredients (saving 2 tablespoons of honey for crust) and blend until creamy.

Prepare graham cracker crust as follows: Crush crackers, add honey and butter. Mix well. Press into 9 inch pie tin or springform. Bake 40 minutes or until golden brown and filling has jelled.
