GOURMET RICE 
1 c. regular rice
2 c. consomme (jellied)
1/2 c. melted butter
2 c. minced fresh parsley
1 lg. onion, minced

Cook rice and consomme in double boiler for 1 hour. Check. Add remaining ingredients and mix. Grease casserole bowl and pour rice mixture into bowl. Put casserole bowl in a pan of water to keep from sticking. Bake for 10 to 15 minutes or longer to keep warm at 350 degrees.
