4 tbsp. butter 1 med. onion 1 c. long grained rice 2 c. chicken consomme, canned or leftover broth 1 sm. can chopped mushrooms 1 sm. can water chestnuts, sliced Pieces of leftover chicken or turkey Cook onions in butter until golden brown. Add rice and brown slowly. Add consomme, mushrooms with liquid, chestnuts. Boil for about 30 minutes. Add chicken or turkey and transfer to baking dish and cover. Bake at 350 degrees for 30 minutes. Sprinkle with toasted almonds just before serving. |
