SALAMI SAUSAGE 
5 lbs. hamburger
4 tbsp. Mortons Tender Quick salt
2 1/2 tsp. mustard seed
2 tsp. black pepper
2 1/2 tsp. garlic salt
1 tsp. hickory smoke salt

Mix all ingredients together thoroughly. Refrigerate covered with wax paper or foil. Every day for 3 days take out and mix thoroughly. On 3rd day form into loaves approximately 2 x 6 inches. Place on broiler pan and bake for 10 hours at 150 degrees. Turn over once during baking. Let cool and wrap. Store in refrigerator or freezer.
