MINI APPLESAUCE SPICE MUFFINS 
1 c. butter, softened
2 c. sugar
2 eggs
2 c. applesauce
4 c. all-purpose flour
2 tsp. baking soda
1 tsp. salt
1 tbsp. ground cinnamon (I use more)
2 tsp. ground allspice
1/2 tsp. ground cloves
1 c. chopped pecans (I use more)

Cream butter; gradually add sugar, beating well at medium speed of an electric mixer. Add eggs, one at a time, beating after each addition. Add applesauce, mixing well.

Combine flour and next 5 ingredients; add to creamed mixture, mixing well. Stir in pecans. Fill greased miniature 1 3/4" muffin pans about three fourths full. Bake at 350 degrees for 14 minutes or until done. Transfer from pans to wire racks; sprinkle with powdered sugar. Yield: 7 dozen.

These were wonderful! I made them for a potluck and they were devoured. I added brown sugar to the tops before cooking instead of sprinkling with powdered sugar afterward. Yum! Great Recipe.

Mine are in the oven right now! I halved my recipe and omitted the cloves and allspice, and added a few grated baby carrots as well as replacing the pecans with walnuts. I'm hoping this might make them taste a bit more like carrot cake. I'll post as soon as they're done!
