ORANGE SOUFFLE RING WITH CHICKEN
SALAD
 
2 env. unflavored gelatin
2 c. sugar
Dash of salt
4 egg yolks
2 1/2 c. fresh orange juice
1 tsp. grated orange peel
3 tbsp. lemon juice
4 c. orange sections, membrane removed, cut half
2 c. whipping cream, whipped

Mix gelatin, sugar, and salt in pan. Beat together egg yolks and 1 cup orange juice. Stir in gelatin mixture. Cook until comes to a boil. Remove from heat, stir in lemon juice and orange peel and remaining juices. Chill, stirring occasionally, until mixture mounds when dropped from spoon. Stir in orange sections, fold in whipped cream. Pour into a 2 quart mold, chill until set.

Make 4 cups of your favorite chicken salad, using white meat only. Fill salad mold center. Sprinkle over toasted sliced almonds.
