EASY ENCHILADAS 
1 pkg. (10 to 12) flour tortillas
1 whole chicken
1/4 c. finely chopped onion
1 can refried beans
1/2 c. grated cheddar cheese
"Special tomato sauce" (see potpourri section)

Cook chicken (seasoned with salt and pepper) in crock pot until done. Remove skin and bones and cut or shred meat into small pieces. Mix meat, onions, and refried beans together. Spoon meat mixture onto each tortilla. Roll up and place seam side down into a greased oblong baking dish (a 9 x 13 inch cake pan works well). Pour "Special tomato sauce" over tortilla rolls. Bake uncovered in a preheated 375 degree oven approximately 20 minutes. Sprinkle with cheese and bake about 5 minutes longer.
