BACON N' CHEDDAR POTATOES 
6 lg. potatoes
1 (12 oz.) pkg. Cheddar cheese
1/2 c. bacon bits (or bacon strips), fried & diced

Wash potatoes and peel. Dice into cubes. Boil until almost done. Drain. Melt 2 to 4 tablespoons butter onto a cookie sheet or into a 9 x 13 inch baking pan. Place potatoes in baking pan or onto cookie sheet. Bake potatoes for about 10 to 15 minutes, then top with Cheddar cheese and bacon pieces or bacon bits. Bake an additional few minutes or until cheese melts, or longer if you want a krispier texture. Oven temperature 350 to 375 degrees.
