DELMONICO POTATOES 
3 lbs. cooked, diced potatoes
3 c. white sauce
1/2 to 3/4 lbs. American cheese
Salt and pepper to taste
Bread crumbs

Cook and drain potatoes. Put in casserole. Make white sauce with 3 tablespoons flour, 3 tablespoons butter, and 3 cups milk. Season to taste. Add cheese to sauce over low heat until thoroughly melted. Pour sauce over potatoes and stir gently.

Mix bread crumbs with small amount of melted butter, sprinkle on top. Bake at 350 degrees until heated through.
