MOCHA CAKE 
1 1/4 c. flour
1 c. brown sugar (packed)
1/4 c. cornstarch
3 tbsp. cocoa
1 tsp. baking soda
1 tsp. instant coffee powder
1/2 tsp. salt
1/3 c. oil
1/2 tsp. vanilla
1 tbsp. vinegar
1 c. water

Mix all ingredients together until thoroughly blended. Pour into a 8 x 9 inch cake pan, bake at 350 degrees for 40 minutes. Cool, spread with Mocha frosting.

Mocha Frosting:

3 tbsp. butter
1 1/2 c. powdered sugar
2 tbsp cocoa
1/2 tsp. vanilla
1/2 tsp. instant coffee powder
1 tbsp. milk

Mix until smooth, spread onto cooled cake. Serves 9.
