WATERMELON RIND PICKLES | |
Rind of 1 lg. watermelon 1 tbsp. powdered alum 7 c. sugar 2 c. white vinegar 1/4 tsp. oil of cloves 1/2 tsp. oil of cinnamon Use a potato peeler to peel rind; leave a trace of pink on the inside for color. Cut rind into pieces; let stand overnight in cold water with alum. Drain well. Bring next 4 ingredients to a boil. Add watermelon rind and bring to boil again. Set aside. Third morning, bring to a boil, seal in hot sterilized jars. Makes about 7 pints. |
