WATERMELON RIND PICKLE 
7 lb. watermelon rind
7 c. vinegar
1/2 tsp. oil of cloves
1 tbsp. slake lime
1 gallon of water
5 lb. sugar
1/2 tsp. cinnamon

Trim off red and dark part of watermelon rind. Cut in small pieces. Soak in lime water (1 tablespoon lime to 1 gallon water) for 2 hours. Drain. Rinse and cover with cold water.

Cook until tender, but not soft. Drain. Combine sugar, oil of cloves, vinegar and cinnamon. Heat to a boil and pour over rinds. Let stand overnight. In the morning drain off syrup; heat and pour over rinds. Repeat. The third morning, heat rind in syrup. Seal in sterilized jars. Yield: 8 pints.
