LEMON RIND PASTRY 
1 c. + 2 tbsp. flour
2 tbsp. sugar
1 stick butter
1 egg yolk
Pinch salt
Grated rind of 1 lemon

Put flour, butter in 1/4 inch slices, sugar, salt, grated rind and egg yolk in food processor or mix by hand until crumbly. Press by hand into 9 inch pie plate. Chill pastry while making filling.

(This pastry may be used with any fruit pie - baking as pie recipe calls.)
