SCALLOPED CORN 
A delicious vegetable dish one can "put together" in minutes.

2 1/2 c. fresh sweet corn, cut from cob
3 eggs, slightly beaten
2 c. milk
3/4 tsp. salt
Dash of pepper
1 tbsp. shredded onion
2 tbsp. sliced pimiento
3 tbsp. melted butter
3/4 c. crushed cornflakes

Mix all ingredients together, except cornflakes. Pour into buttered casserole dish; cover with cornflakes. Bake in 325 degree oven for 1 hour. NOTE: I crush the cornflakes in my hand as I sprinkle them over the top. Servings: 4.
