SAUSAGE-SQUASH DELIGHT 
1 qt. squash (cooked and mashed)
1 lb. sausage
1 sm. onion (finely chopped or grated)
1/4 tsp. pepper
1 1/2 c. bread crumbs
1 tsp. salt

Mash sausage with fork and fry until cooked but not brown. Drain off fat.

Add grated onion, bread crumbs, salt and pepper. Spread squash in a casserole dish and top with sausage mixture. Bake for 30 minutes at 375 degrees.
