SQUASH PUDDING DELIGHT 
2 c. yellow squash, mashed slightly
1/4 c. butter, melted
2/3 c. sugar or equal Nutrasweet
1/4 tsp. salt
2 tbsp. flour
1 2/3 c. milk
1 tbsp. vanilla
1/4 tsp. nutmeg

Slice and steam squash. Mash slightly. Add butter. Mix sugar, salt and flour. Mix into squash, add milk, vanilla. Pour into dish. Sprinkle on nutmeg. Bake at 325 degrees for 40-45 minutes.

Made this with leftover buttercup squash. Delicious. I didn't have enough milk so I made up the difference with half and half. Super fattening, I know, but crazy delicious. Also used brown sugar instead of white. This will be my go-to dessert for leftover yellow squash.
