FILLET OF FLOUNDER THERMIDOR 
5 tbsp. butter
8 flounder fillets (2 lbs.)
2 tsp. salt
1/2 tsp. seasoned salt
1/8 tsp. pepper
1 1/4 c. milk
3 tbsp. flour
1 c. grated Cheddar cheese
3 tbsp. sherry (optional)
Paprika

Preheat oven to 350 degrees. In 1 quart saucepan, melt 2 tablespoons butter. Brush over fillets. Sprinkle with salt, seasoned salt, and pepper. Roll up each fillet and place, seam side down, in 9 x 9 inch baking dish. Pour 1/2 cup milk over fillets. Bake in oven 25 minutes or until fish flakes easily when tested with fork.

Meanwhile, in 2 quart saucepan over medium heat, melt remaining butter. Stir in flour; gradually add remaining milk. Cook, stirring, until thickened. Reduce heat; stir in cheese and sherry. Preheat broiler. Spoon liquid from cooked fish. Stir 1/4 cup of liquid into cheese sauce (if not using sherry, use extra 3 tablespoons of liquid). Pour cheese sauce over fish; sprinkle with paprika. Broil about 1 minute, just until cheese sauce is slightly golden.
