SPAGHETTI SQUASH 
1 spaghetti squash

FILLINGS:

1/2 pkg. chopped spinach, drained
1/2 (8 oz.) container cottage cheese or Mozzarella cheese, or Muenster cheese
Fresh tomatoes
Fresh zucchini
Fresh mushrooms

Split in half lengthwise. Clean inside of seeds. Place squash face down in pan. Pierce bottom of squash with fork, pour 1/4 cup water in pan, cover with aluminum foil and bake at 400 degrees for 1/2 hour until squash is almost tender. Flip the squash and fill with your stuffing. Bake for 10 minutes until stuffing is heated through (uncovered). Top with cheese, let melt.
