SPAGHETTI SQUASH 
1 lg. spaghetti squash
2 lg. zucchini, shredded
2 c. tomato sauce or part Rotel tomatoes
1/2 tsp. salt
Pepper to taste
1/4 tbsp. basil
1 c. grated Cheddar cheese
4 tbsp. grated Parmesan cheese

Cut squash in half lengthwise. Remove seeds. Place in microwave cut side up in a dish with 1/4 cup water. Cover with Saran Wrap and cook 7-8 minutes, turning until tender. Remove squash with fork. Combine with remaining 6 ingredients. Place in baking dish. Top with Parmesan cheese and bake in a 350 degree oven for 20 minutes. Enjoy.

Since microwave ovens vary in power, you may need to adjust your cooking time.
