COUNTRY BRUNCH 
12 eggs, well beaten
9 slices white bread, crusts removed and cut into 1/2 inch sqs.
4 tbsp. butter, cut into sm. cubes
3 c. milk
6 scallions, chopped (including green tops)
1/2 c. chopped green bell pepper
2 tbsp. chopped pimento
2 lbs. pork sausage, browned, drained, and crumbled
2 c. Cheddar cheese (8 oz.), shredded
1 tsp. salt
1/4 tsp. ground black pepper

Combine all the ingredients in a large bowl and blend well. Pour the mixture into a buttered 9 x 13 inch casserole dish and refrigerate, covered, for 8 hours or overnight. Bake in a preheated 300 degree oven for 1 hour, uncovered. Serve immediately. Serves 12 to 14.
