COUNTRY STYLE OMELETTE 
6 eggs
Salt and pepper
1 chopped onion
1 tbsp. butter
2 tbsp. water
1/2 lb. pork sausage
2 med. shredded potatoes
Red pepper

In a large skillet, saute sausage until no longer pink. Add onions and butter and saute until onions are soft. Add potatoes and cook until soft. Beat eggs, salt, pepper and water. Pour mixture over sausage and potato mixture. Cook over medium heat until eggs set - push eggs until all is cooked. When eggs are light brown on the bottom, sprinkle with chopped parsley and garnish with peppers. Serve.
