SOPAIPILLAS 
4 c. flour
1 1/4 c. tsp. salt
3 tsp. baking powder
3 tbsp. sugar
2 tbsp. shortening
About 1 1/4 c. milk
Salad oil for frying

Sift flour with salt, baking powder and sugar. Cover bowl and let stand 30 minutes to 1 hour. Then roll out between 1/8-1/4 inches thick on lightly floured surface. Cut into diamond shaped pieces or triangles.

Heat 1 inch of oil in frying pan to about 380-400 degrees. Add a few pieces at a time; turn at once so they will puff evenly. Then turn back to brown both sides. Drain on paper towels. Serve with honey or sprinkled with cinnamon and sugar.
