ITALIAN FRIED CHICKEN 
1/3 c. grated Parmesan cheese
3 tbsp. all-purpose flour
3/4 tsp. dried basil, crushed
1/2 tsp. salt
1/8 tsp. ground nutmeg
1 (2 1/2 to 3 lb.) broiler fryer chicken, cut up
2 tbsp. cooking oil

In paper or plastic bag combine Parmesan cheese, flour, basil, salt, nutmeg and black pepper. Add chicken a few pieces at a time and shake to coat evenly. In 12 inch skillet heat cooking oil. Place meaty chicken pieces toward the center and remaining pieces around the edge. Cook uncovered over medium-low heat for 50 to 55 minutes or until chicken is tender, turning occasionally. Drain on paper towel.
