ITALIAN OVEN-FRIED CHICKEN | |
3 1/2 lbs. chicken, cut up 2 eggs plus 4 tbsp. milk 1 1/2 c. Italian bread crumbs 1/4 c. Parmesan cheese 1 tsp. each garlic powder, salt, paprika 1/4 tsp. pepper Put equal amounts of oil and melted butter (2 tablespoons) in shallow baking pan. Preheat oven to 375 degrees. Dip chicken in egg and milk mixture. Add remaining ingredients together in large bowl and after dipping in egg, then roll in dry ingredients. Let stand 10 minutes to set. Place coated chicken, skin down, in pan which has been coated with oil and butter. Bake 40 minutes and turn. Continue baking for 35 minutes until tender. |
